Asian Chicken Salad (recipe)

I’m always trying to find ways to get more veggies into the husband’s diet. The boy does not eat enough fresh greens! He especially does not like uncooked vegetables (he prefers most of his veggies deep-fried) so I am always looking to find a good salad that he will eat.  I think I finally found a winner!!  Husband helped himself to not one, not two, but THREE heaping plates of this asian chicken salad that I made!!  I made this salad again for a bbq over the weekend and my friend’s husband said he liked it, too!  Since it was a hit with the two hubbies, I had to share with you guys.  Maybe you can get the men in your life to eat it, too!

Ingredients

For dressing:

  • 1/4 cup vegetable oil
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1  1/2 tablespoon sugar
  • Kosher salt and freshly ground black pepper, optional
  • 1 tsp sesame oil
  • 1 tablespoon of sesame seeds

For salad:

  • 1 large head of romaine lettuce
  • 3 stalks of green onion
  • 1 15oz can of mandarin oranges
  • 1 package of instant ramen noodles
  • 1 small package of sliced almonds + 1/2 tablespoon of sugar
  • 1 rotisserie chicken

I think the success of this salad is due to its crunchiness. You can fool any guy into thinking he is eating lots of carbs by filling the salad bowl with lots of crunchy stuff!  I like to add candied almonds and a package of ramen noodles for lots of crunch!

To make the candied almonds, use sliced (not slivered) almonds:

Toast the almonds in a frying pan over medium heat on a stove.  Sprinkle in a 1/2 tablespoon of sugar and stir constantly. Watch carefully because the almonds will brown pretty quickly and start to burn if you are distracted and taking pictures for your blog!  Immediately, remove from heat once the sugar starts to crystallize:

You can buy crispy chow mein noodles in the salad section of a grocery store, but I like to use the cheap Top Ramen. It’s less than a dollar!  Use your hands to break the ramen into tiny pieces inside the bag:

Bite-sized pieces are perfect:

Chop up the romaine lettuce and green onions and pour into a big bowl:


Add the canned mandarin oranges (my favorite part of the salad!):

Add ramen noodles and almonds:

Shred up the rotisserie chicken (I just pull it apart with my fingers) and add to the salad:

Mix together all the ingredients for the dressing in a bowl:

Pour dressing over the salad and mix all the ingredients together:

Serve immediately!!

Finally a salad that husbands everywhere can enjoy!!
