Since I shared about my green tea cupcakes last week, I thought I’d share about my absolute favorite cupcake of all time: Magnolia Bakery’s Red Velvet Cupcake. I love love LOVE red velvet cupcakes and NYC’s Magnolia’s has the BEST RECIPE. It’s my “go-to” cupcakes for birthday celebrations, potlucks, dessert potlucks and just whenever I have a hankering to eat two dozen cupcakes by myself. The cupcakes turn out really fluffy and moist- better than any store bought cupcake! Instead of vanilla frosting though, I like to use this cream cheese frosting. This cream cheese frosting is SOOO good!! It totally makes the cupcake! Sometimes I will bake these cupcakes just so I can have the frosting!
I made these particular cupcakes for some friends who were moving to San Diego so I had to make some white chocolate California state toppers for the cupcakes:
I was happy to be able to re-use the same chocolate state molds that I had bought last year. I wrote a full tutorial on how to make chocolate states here.
